Fresh green garlic includes a light flavour to these pearl millet pancakes and is interestingly served with sweetened yogurt.

LILU LASAN NU CHAMCHAMIYA

Active ingredients

2 cups pearl millet flour (bajre ka atta).
1 tablespoon carefully sliced green garlic bulbs.
1 tablespoon finely sliced green garlic stalks + for garnish.
1 tsp ginger-green chilli paste.
1/2 tsp cumin seeds.
Salt to taste.
A pinch of soda.
2 cups buttermilk.
Ghee for brushing + for drizzling.
White sesame seeds for sprinkling.
Sweetened yogurt to serve.

Method.

1. Take pearl millet flour in a big bowl, add green garlic bulbs, green garlic stalks, ginger-green chilli paste, cumin seeds, salt and soda. Add buttermilk and mix till a smooth batter is formed.
2. Heat a non-stick tawa. Brush some ghee on it, put little parts of the batter on the hot tawa and spread it into small discs. Sprinkle some white sesame seeds on each disc. Sprinkle some ghee on the top and sides of the discs. Cook on medium heat for 2-3 minutes.
3. Turn each disc and prepare the other side for 2-3 minutes also.
4. Transfer the discs on a serving plate, garnish with green garlic stalks and serve hot with sweetened yogurt.
