Kand Ke Kaap | कंद के काप | Purple Yam Fritters | Winter Recipe | Sanjeev Kapoor Khazana

It's here! The Purple Yam. Crispy, spiced fritters of this root vegetable are an interesting side meal. A tasty way to offer yourself carbs, potassium and Vitamin C.


300 grams purple yam (kand), peeled, halved and cut into slices
2 tablespoons ginger-garlic-green chilli paste
1 tsp red chilli powder
1/2 tsp turmeric powder
2 tablespoons chopped fresh coriander leaves
Salt to taste
2 tablespoons tamarind paste
Oil for shallow frying
1/2 cup semolina
1/2 cup rice flour
1 tsp red chilli powder


1. Combine ginger-garlic-green chilli paste, red chilli powder, turmeric powder, coriander leaves, salt, and tamarind paste in a shallow large bowl.
2. Add the purple yam slices and rub the mix well appropriately on each slice.
3. Mix semolina, rice flour and red chilli powder on a big plate.
4. Cover each slice of purple yam with the semolina mixture.
5. Heat enough oil in a non-stick tawa. Place the purple yam slices and shallow fry on both sides till golden brown and crisp. Drain pipes on an absorbent paper.
