Bacon and Egg Potato Salad

Yield: 6 to 8 portions
Ingredients
1 1/2 pounds fingerling potatoes
1 1/4 teaspoons kosher salt
1/2 pound piece bacon, little dice
2 tablespoons red wine vinegar
3/4 cup Greek yogurt
3 tablespoons entire grain mustard
6 scallions, very finely sliced on the bias
1 small red onion, little dice
1 tablespoon granulated sugar
1/4 teaspoon freshly cracked black pepper
2 large hard-boiled eggs, chopped
Directions
Put the potatoes in a medium-size saucepan and cover with cold water; add 1 teaspoon of the salt. Give a boil, then lower the heat to medium and cook up until fork tender, about 15 minutes. Meanwhile, saute the bacon in a frying pan over medium-low heat till crispy, about 12 minutes.
Drain the potatoes (do not wash), transfer to a baking sheet and let cool for 6 to 8 minutes, then cut into quarters.
In a bowl large enough to blend the potatoes, combine the vinegar, yogurt, mustard, scallions, red onion, sugar, staying 1/4 teaspoon of salt and pepper. Transfer the potatoes to the bowl, include the bacon and hard-boiled eggs and mix by folding carefully. Serve at room temperature.

i don’t usually eat potato salad cuz i hate mayo. greek yogurt i can get into – very much. i almost always sub sour cream for mayo, but sometimes yogurt is better.

Potato salad is such a favorite cause there are so many ways to make it and unique twists to put in it! And it goes far/feeds a lot for very little as something to bring to gatherings. I’m so trying this style this summer!

I did such a delicious sweet potato salad with a dressing made out of organic avocado mayo, half an orange, squeezed, grain mustard, splash apple cider vinegar, scallions, salt, pepper paprika. Boy was it yummy. I’m doing it again on Tuesday and I’m going to add the bacon and eggs this time.

Hey Jet, I took a week long Thai cooking school in Oakland by Kasma. I’m cooking chicken massaman curry. I’m crippled and don’t get out much anymore. I don’t have lemon grass or galongal. I substituted tianjin preserved vegetables. A long with the Tamarind and 10 Thai chilies it tastes excellent. I didn’t have onions so substituted fried onions. I love your cooking and thank you for your time . Duano
