Ever heard of chickpeas as a spread and that has a drizzle of extra virgin olive oil? With avocado, mayo and flavoring of course. A wonderful blend sandwich.
GUACAMOLE CHICKPEA SANDWICH
Components
1/2 avocado
1 cup boiled chickpeas
8 toasted sourdough bread pieces
2-3 tablespoons mayo
Salt to taste
Black pepper powder to taste
2 green chillies, sliced
1/2 tsp red chilli flakes
2 tbsps sliced fresh parsley
1 small onion, sliced
1 little tomato, sliced
1 tbsp lemon juice
2-3 tablespoons extra virgin olive oil + to drizzle
1/4 cup grated carrot
English cucumber slices as required
Quartered cherry tomatoes as required
Micro greens as needed
Method
1. Transfer the chickpeas in a food processor container. Deseed avocado, eliminate pulp and contribute to the food processor container. Add mayo and procedure to a coarse paste.
2. Transfer in a bowl. Add salt, black pepper powder, green chillies, red chilli flakes, parsley, onion, tomato, lemon juice, additional virgin olive oil, carrot and mix well.
3. Spread the ready chickpea mix uniformly on the toasted bread slices.
4. Arrange cucumber pieces, cherry tomatoes and micro greens on top.
5. Drizzle extra virgin olive oil on top and serve.
