Components

Butter:

1/2 cup (1 stick) saltless butter, at room temperature level
2 tablespoons anchovy paste
1 tablespoon sliced chives
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon lemon passion
Kosher salt and freshly ground black pepper, optional

Popovers:

Vegetable oil cooking spray
6 large eggs, at space temperature level
5 cloves garlic, minced
2 cups whole milk, at room temperature level
1 1/4 cups (3 ounces) carefully grated Asiago
1/4 cup (1-ounce) shredded sharp Provolone
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped flat-leaf parsley

Butter: In a little bowl, mix together the butter, anchovy paste, chives, lemon juice, and lemon zest till smooth. Season with salt and pepper (if utilizing), to taste.

Popovers: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a 12-count muffin or popover pan with vegetable oil cooking spray. Set aside.

In a mixer, include the eggs and garlic. Mix on medium speed up until frothy, about 15 seconds. Include the milk and the cheeses and mix until smooth. Add the flour, salt, pepper and parsley. Blend on medium speed until included. Pour the batter into the muffin cups, filling each cup to within 1/4-inch of the top. Bake, without opening the oven door, till puffed and golden, about 30 to 35 minutes. Remove the popovers from the oven and serve with the anchovy butter.

  4. I always thought to make pop overs the muffin tin needs to be hot to make them rise up high; also saw it on DDD, and they fluffed up

    1. The cheese is weighing it down. I’m sure it’s delicious but normal popovers are great. Check out Alton Brown’s recipe. I add a bit more butter which keeps it from rising as much but still awesome.
