Gawthi Gavar Ki Sabzi | गावठी गवार की सब्ज़ी | Sanjeev Kapoor Khazana

A completely village-style method of making this wild cluster beans. Basic and flavourful, yet will leave you requesting more.

GAWTI GAVAR KI SABZI

Ingredients

300 gms wild cluster beans (gawti gavar).
2 tbsps oil.
1 tsp cumin seeds.
4-5 garlic cloves, squashed with the skin.
3 green chillies, slit.
1/4 tsp turmeric powder.
Salt to taste.
1/3 cup scraped fresh coconut + for garnish.
2 tbsps sliced fresh coriander leaves + for garnish.
Rotis to serve.
White onion wedges to serve.

Method.

1. Bring adequate water in a deep pan.
2. Add the wild cluster beans, mix, cover and cook on medium heat for 8-10 minutes.
3. Drain pipes the beans on to a plate. Enable to cool a little. String the beans and break them in half.
4. Heat oil in an earthen pot. Include cumin seeds and let them change colour.
5. Include garlic and green chillies and sauté till golden brown. Include turmeric powder and mix well.
6. Include the prepared beans and salt and mix till well combined. Cover and cook for 2-3 minutes.
7. Stir in the coconut and coriander leaves. Cover and cook for 1 minute.
8. Change the heat off, transfer the sabzi in a serving bowl. Garnish with fresh coconut, coriander leaves and serve hot with rotis and white onions.

  2. sanjeev ji ,you remove the fibres without boiling the gavar….
    you just overcooked it .
    Just prepare like any other vegetable , it tastes better 🙂
