GARLICKY MUSHROOM PAKORAS

Ingredients

1 1/2 tbsps garlic paste
16-20 button mushrooms
Oil to deep fry
1 1/2 cups gram flour (besan).
1/4 tsp carom seeds (ajwain).
1 tsp red chilli powder.
A pinch baking soda.
Salt to taste.
1 lemon.

Technique.

1. Heat enough oil in a kadai.
2. Trim the stems of the mushrooms and put them in a bowl.
3. For the batter integrate gram flour, carom seeds, red chilli powder, baking soda, salt, garlic paste and sufficient water in a bowl and blend till smooth. The consistency of the batter must be thick adequate to coat. Include juice of lemon and blend well.
4. Dip each mushroom in the batter and slide into the hot oil. Deep fry on high heat till golden and crisp.
5. Drain on absorbent paper and serve hot.
