Sounds difficult right? However here we have a fantastic mini omelete with sausage chunks inside onion rings. Tastes just so awesome.

EGG RINGS

Ingredients

2 big onions, peeled and cut into thick roundels
4 eggs
1 little onion, finely sliced
2-3 sausages, sliced
2-3 green chillies, finely chopped
Salt to taste
Squashed black peppercorns to taste
1/4 tsp turmeric powder
3/4 tsp red chilli powder
2-3 tablespoons carefully chopped fresh coriander leaves + for garnish
2-3 tbsps oil
Tomato ketchup to serve

Technique

1. Break eggs in a big bowl, include the chopped onions, sausages, green chillies salt, crushed black peppercorns, turmeric powder, red chilli powder and coriander leaves. Mix till well combined.
2. Heat oil in non-stick pan, organize the onion rings. And include a portion of the egg mixture in centre of each onion ring. Cover the pan with a cover and cook on medium heat for 1-2 minutes. Get rid of the lid, flip the onion rings, cover the pan again and prepare the other side for 1-2 minutes as well.
3. Transfer the cooked egg rings on a serving plate. Garnish with coriander leaves and serve hot with tomato catsup.
