Fish and chips are said to have actually fed the British an army in WWII. Our desi fish and chips with masalas and spices make us pleased. Fish fillet fried to crisp excellence and served with French fries with mint chutney among other accompaniments is just sheer enjoyment.
DESI FISH AND CHIPS
Components
1 medium Indian salmon (rawas), cut into fillets
French french fries to serve
Salt to taste
1 tbsp lemon juice
1/2 tsp turmeric powder
1 tsp red chilli powder
1/2 tsp roasted cumin powder
1 1/2 tsps fish masala
1 egg, broken
Dried breadcrumbs for finishing
Oil for deep frying
To serve
Green chutney
Salad
Lemon wedges
Method
1. Take fish fillets in a big bowl. Add salt, and lemon juice and blend well.
2. Take turmeric powder, red chilli powder, roasted cumin powder, and fish masala in a large plate and mix well. Location the fish fillets and apply the masala well on both the sides of the fillets.
3. Take egg in a bowl, add 2-3 tbsps water and blend well with a fork.
4. Dip the fillets in the eggs and place on the bread crumbs and coat well with the bread crumbs on all sides.
5. Heat sufficient oil in a kadai. Gently slide in the fish fillets and deep fry till golden brown and crisp. Drain on an absorbent paper.
6. Arrange the fried fish in a serving bowl, serve hot with green chutney, salad, French fries and lemon wedges.
