INGREDIENTS
Neutral oil, for frying
1 pound chicken drumsticks
Kosher salt
Newly ground black pepper
Dig up
1/2 cup all function flour
1/2 cup rice flour
2 tablespoons cornstarch
Newly ground black pepper
Kosher salt
Lemon Pepper Sauce
1/2 cup unsalted butter
2 tablespoons garlic paste
2 tablespoons lemon curd
2 tablespoons white soy sauce
1 tablespoon hot sauce
Kosher salt
1 teaspoon liquid spices
Newly ground black pepper
Garnish
Scallions, sliced
Sesame seeds
Parsley, sliced
Lemon wedges
PROCEDURE
1. Heat your oil to 350 ℉.
2. Prep your chicken: Use a paring knife to scrape the skin of the chicken from the idea of the bone down to the flesh, exposing the bone entirely.
3. Season the chicken wings with salt and pepper.
4. Make the dredge: In a big blending bowl, blend together the all function flour, rice flour, cornstarch, black pepper and salt.
5. Toss the wings in the dredge to coat completely. Shake off any excess dredge and place the wings into the hot oil and fry till golden brown and the internal temperature of the chicken reaches 165 ℉, about 5 minutes. Get rid of the wings to a cake rack and season with salt.
6. Make the sauce: In a big frying pan, combine half the butter, garlic paste, lemon curd, soy sauce and hot sauce. Bring the mix to a simmer and season with salt, liquid spices and plenty of black pepper. Get rid of the sauce from the heat and stir in the remaining butter till it melts completely.
7. Toss the wings in the sauce and sprinkle with sliced scallions, sesame seeds and chopped parsley. Serve with lemon wedges.

I worked in a pizzeria for 12 years we never breaded the chicken wing. The two most important things about making chicken wings is the type of oil and the quality of the sauce.
That is why many places give you the choice, breaded or plain. Both have their places and customer preferences and to each their own, I prefer plain myself.
lol the look of some of them pans and such in the basement.. Swear they where throw around. bounced off the walls. Maybe was banged with some utensils. Some torture were done to the equipment down there.. It funny and that whisk. What was that used for before food. love the video and I love me wings too.. Sticky and full of heat..
