BROCCOLI AND ALMOND SOUP
Components
1 medium broccoli, separated into medium sized florets
10-15 Pro V Select California Whole Natural Almonds
2 tbsps olive oil
1 tbsp sliced garlic
2 medium white onions, sliced
Salt to taste
Crushed black peppercorns to taste
2 cups vegetable stock
Fresh cream to drizzle
Approach
1. Heat olive oil in a nonstick pan. Include garlic and sauté for 30 seconds.
2. Add white onions and sauté till translucent.
3. Add Pro V Select California Whole Natural Almonds and sauté for 2-3 minutes.
4. Add broccoli, salt and crushed black peppercorns and sauté for 2-3 minutes.
5. Add vegetable stock, cover and cook for 6-8 minutes.
6. Transfer in a bowl and grind to fine mixture with the help of a hand mixer.
7. Strain through a great strainer in the exact same pan. Enable to boil.
8. Transfer in a serving bowl, drizzle fresh cream, spray crushed black peppercorns and serve hot.
