A light, soft, rice flour flatbread, the needs to be accompanied by pithla, thechaa, chicken/mutton curry.

Components

2 cups rice flour + for cleaning
Salt to taste
White sesame seeds as needed

Technique

1. Sift rice flour and salt in a big bowl. Include 1 1/4 cups warm water and knead into a soft dough.
2. Divide dough into 4 portions and shape each portion into a ball.
3. Dust a worktop with a little of the remaining rice flour. Flatten each portion of the dough and roll it into a disc. This is a bhakri.
4. Heat a non-stick tawa till medium hot and put a bhakri on it.
5. As it is being cooked, use water on the topside of the bhakri and sprinkle white sesame seeds. Turn it and the other side likewise.
6. Make more bhakri likewise.
7. The bhakri needs to be soft and fluffy. Serve hot.
