Bhaja Masala | भाजा मसाला | Sanjeev Kapoor Khazana

A Bengali spice mix that is widely utilized in Bengali preparations right from panchmishali torkari to street-foods such as puchka, churmur, and ghugni.

BHAJA MASALA

Components

4 tbsps cumin seeds
2 tsps coriander seeds
2 bay leaves
4 tbsps fennel seeds (saunf).
6-8 green cardamoms.
3 dried red chillies.

Method.

1. Dry roast cumin seeds, coriander seeds and bay leaves in a pan till they turn fragrant. Transfer in a plate and permit to cool.
2. Include fennel seeds, green cardamoms and dried red chillies in the same pan and roast till fragrant. Transfer in the very same plate and allow to cool.
3. Put the roasted spices in a mixer jar and grind to a fine powder.
4. Transfer the masala into a jar. Usage as needed.

    1. This is a typical Bengali masala for Bengali cuisine. This mix of spices is not for cooking but for sprinkle over the cooked food. It may be chicken curry, or bengali cabbage mash recipe and so many.
