Laddoos made with healthy bajra flour, roasted in aromatic ghee, sweetened with jaggery and enriched with crispy nuts!
BAJRA LADDOO
Components
1 1/2 cups pearl millet (bajra) flour
1/2 cup ghee
1 cup sliced jaggery (gud).
1/2 cup roasted peanut powder.
2 tbsps chopped cashew nuts.
2 tbsps sliced almonds.
2 tbsps roasted dried coconut.
1/2 tsp green cardamom powder.
1/2 cup fried edible gum resin (dink).
Roasted poppy seeds for finishing.
Method.
1. Heat ghee in a non-stick pan. Add pearl millet flour and blend well. Continuously mix till the flour is aromatic and golden. Transfer on a large plate and allow to cool totally.
2. Heat jaggery in another non-stick pan. Cook till it melts completely. Take the pan off the heat and allow to cool entirely.
3. Include the roasted peanut powder into the roasted flour mix together with cashew nuts, almonds, dried coconut, green cardamom powder and fried edible gum resin. Add the cooled melted jaggery and mix till well combined.
4. To make the laddoos ¸ take small parts of the mixture and shape each part into a ball. Roll it over the poppy seeds.
5. Arrange on a serving plate and serve.
