A scrumptious sabzi used mangodi. To make this Rajasthani dish, sauteed Mangodi crush is added into a flavourful curry and prepared to perfection.

MANGODI KI SABZI

Active ingredients

1 cup mangodi
2 tbsps ghee
1 tsp cumin seeds
1/4 tsp asafoetida (hing).
2 tsps chopped garlic.
2 tsps sliced ginger.
2-3 green chillies, sliced.
2 medium onions, sliced.
1 cup fresh tomato puree.
1/2 tsp turmeric powder.
1 tsp coriander powder.
1 1/2 tsps red chilli powder.
Salt to taste.
2 tbsps sliced fresh coriander + to sprinkle.

Method.

1. Heat ghee in a nonstick wok. Add mangodi and sauté on medium heat for 2-3 minutes. Drain pipes and set aside.
2. Include cumin seeds to the pan and once they start to alter the colour, include asafoetida, garlic, ginger, green chillies and sauté for 30 seconds.
3. Include onions and sauté till golden brown.
4. Include tomato puree and mix well. Cook till fat separates.
5. Include turmeric powder, coriander powder, red chilli powder, salt and blend well.
6. Crush the mangodis coarsely.
7. Include 1 cup water to the pan and once the mix pertains to a boil, add the crushed mangodis. Include 2 cups water and once the mixture concerns a boil, cover and cook for 15-20 minutes on low heat.
8. Add coriander and mix well.
9. Transfer in a serving bowl, spray some coriander and serve hot.
