बीटरूट कर्ड राइस | Beetroot Curd Rice | Sanjeev Kapoor Khazana

2 medium beetroot, boiled, peeled and roughly chopped
3 cups prepared rice
1 1/2 cups cooled yogurt
1/2 tsp grated ginger
2-3 tbsps fresh cream
Salt to taste
2 tbsps oil
1 tsp split Bengal gram
1 tsp mustard seeds
1/4 tsp asafoetida (hing).
15-20 curry leaves.
Fried papadam for serving.

Method.

1. Transfer the boiled beetroot in a mixer jar and blend into great paste.
2. Take prepared rice in bowl, mashed with the spoon add grated ginger, yogurt, fresh cream, salt, and ready beetroot puree. Mix well till well combine. And set aside.
3. Heat oil in a non-stick pan include Bengal gram, sauté till golden brown. Include mustard seeds when they splutter include asafoetida curry leaves and sauté for 30 seconds.
4. Pore the prepared tempering on a beetroot mixture mix well and keep into the fridge for 1 hour.
5. Transfer on a serving bowl and serve with fried papadam.
