कोरियन फ्राइड राइस | Korean Fried Rice | Sanjeev Kapoor Khazana

A spicy and flavourful made with great deals of veggies, red chillies and eggs.

Components

1 1/2 cups Daawat Super Basmati
Salt to taste
4 eggs
Crushed black peppercorns to taste
4 tablespoons sesame oil
1 1/2 tablespoons carefully sliced garlic
1/2 tablespoon grated ginger
3-4 spring onion bulbs, vertically sliced
1 medium carrot, peeled and cut into 3 inch thin strips
4-5 snow peas, diagonally cut in half
1/2 little yellow capsicum, cut into thin strips
1/2 small green capsicum, cut into thin strips
1/2 small red capsicum, cut into thin strips
1/2 tablespoon dark soy sauce
1 tbsp sriracha sauce
5 tbsps chopped spring onion greens
1/4 cup blanched green peas
1 tsp sugar
Toasted white sesame seeds for garnish
Spring onion green curls for garnish
Cucumber salad to serve

Method

1. Transfer Daawat Super Basmati Rice in a large bowl. Add water and wash it completely for 2-3 times. Drain pipes and ad enough water. Set aside to soak for 30 minutes. Drain.
2. Heat sufficient water in a deep pan. Include salt and let the water concern a boil.
3. Add the drained pipes rice and for 10-12 minutes. Drain the rice and set aside.
4. Break in the eggs in a bowl. Include salt and crushed black peppercorns and blend well.
5. Heat 2 tablespoons sesame oil in a non-stick wok. Include the eggs and constantly mix and for 2-3 minutes. As soon as cooked, move on to a plate.
6. Heat remaining sesame oil in the same wok. Include garlic and ginger and mix well. Prepare for 1-2 minutes.
7. Include spring onion bulbs and sauté on high heat for 1-2 minutes. Include carrot, and snow peas and blend well. Cook for 1-2 minutes.
8. Include salt and blend well.
9. Include yellow capsicum, green capsicum, red capsicum, and mix well. Cook for 1-2 minutes.
10. Add dark soy sauce, siracha sauce and mix well. Add spring onion greens and green peas and sauté well.
11. Sugarcoat, mix and cook for 1 minute. Include the prepared rice and toss till well combined.
12. Add the cooked eggs and toss once again. Add staying spring onion greens and mix.
13. Transfer the rice into a serving plate, garnish with toasted white sesame seeds and sprig onion green curls. Serve hot with cucumber salad.
