All the mango enthusiasts, here is a fantastic Kairi ki Kadhi made using raw mango (kairi). You can think of the blast of flavours this kadhi has, so attempt it out now to welcome the mango season.
KAIRI KI KADHI
Components
2 medium raw mangoes, peeled, seeded and sliced
1/2 cup gram flour (besan).
1/2 tsp turmeric powder.
1/2 tsp red chilli powder.
2 tablespoons oil.
1 tsp mustard seeds.
1/2 tsp fenugreek seeds.
8-10 curry leaves.
1 medium onion, sliced.
Salt to taste.
1 tablespoon sliced jaggery.
2-3 tablespoons sliced fresh coriander leaves + to spray.
Steamed rice for serving.
Method.
1. Transfer the raw mangoes in a blender container. Add 1/2 cup water and grind to fine paste.
2. Transfer in a bowl. Include gram flour and whisk well. Include turmeric powder, red chilli powder and mix.
3. Include 2 1/2 cups water and mix well.
4. Heat oil in a deep nonstick pan. Include mustard seeds and as soon as they begin to splutter, add mustard seeds and when they start to splutter, add fenugreek seeds, curry leaves, onion and sauté till onions turn translucent.
5. Include the raw mango mixture, salt, 1 cup water and blend well. Cook on medium heat for 8-10 minutes.
6. Include jaggery, coriander and mix well.
7. Transfer into serving bowl. Garnish with coriander and serve hot with steamed rice.
