ओलान | Olan | Sanjeev Kapoor Khazana

Traditional and tasty curry from Kerala, Olan, is a should during celebrations. It is a subtle flavored coconut based curry made using red chawli and ash-gourd. This simple and delicious can be prepared in a jiffy.

OLAN

Components

1 1/2 cups boiled red chawli
200 grams ash gourd (peta), peeed and cut into 1 inch cubes
2-3 green chillies, slit
10-12 curry leaves
1 cup thin coconut milk
Salt to taste
1/2 cup thick coconut milk
1 tablespoon coconut oil

Method

1. Heat an earthen vessel. Add red chawli, ash gourd, green chillies, curry leaves, thin coconut milk and salt and blend well. Bring the mixture to a boil. Decrease the heat to medium, cover and till the ash gourd is cooked completely.
2. Switch the heat off and add the thick coconut milk and mix well. Include coconut oil, mix and transfer into a serving bowl. Serve hot.
